Mmm, crustless egg pie for dinner. Eggs, milk, cheddar and gouda cheese, broccoli, bacon, onions. My kids actually like this.

I just put in some of the jarred onion flakes. But some real onion would have been better. I’m not a huge fan of onions, but in the right place, they can make a big difference.

We try to have one meatless dinner a week. Didn’t manage it this week, though.

You can put just about anything in a quiche: cubed ham or crumbled cooked bacon, chopped tomatoes (no thanks), chopped spinach, chopped asparagus, cooked cubed potato. Some cooked shrimp would be really good. After all, i t’s just an egg casserole.

It was amazing. No leftovers. Which is both good and bad. I don’t think my kids would have liked it as much with a crust. So we had toast with it.

We usually end up having salad bar night. It’s a bit of prep, but they like it. Lots of beans for protein. And there are tons of meatless recipes out there. You can have a baked potato with Facos on it because those are make of soy.

You don’t even need the extra protein, but everyone wants something to sink their teeth into.

My wife does not like beans. At. All. So, I struggle with that a bit. We do use the Bac-Os, too. And even diced chicken breast in the salad is better than whole chicken breasts.

Also, I try to do stir-fry sometimes. That’s a great way to get veggies in. I just have to work to keep down the oil and the salt content.

I have the original Moosewood Cookbook from back in the day. It’s full of great veggie recipes. Turns out it’s not particularly low-cal or healthy though. Lots if stuff like chick peas.

Stir fry! Yes, another great way to go all veggies. I like to put hard boiled eggs on salad. That’s a nice shot of protein. In fact, I try to keep a bowl of them in the fridge for breakfast and snacks.

Another quickie thing I like to make I call chicken bites. Just take a tray of boneless chicken breasts, cube them, then fry them with nothing but season salt. No oil even. You can eat it as is for lunch, put it in salad, have it on hand for after school snacks. You name it.

I also make baked chicken nuggets. I’ll cut the chicken similarly, dredge the pieces in egg, then coat with a store brand Shake n Bake. Then bake. Kids love them, and there’s nothing nasty in them at all.

They’re absolutely a critical ingredient in lots of dishes. I just don’t like big pieces for textural reasons.

Great idea.  Another easy thing I do to flavor my chicken nuggets/tenders/bits is to marinate them in a bag with cheap Italian salad dressing.  When I do it for fajitas or other faux-Mixican dishes, I use cilantro, oil, and lime juice.
